I'm still trying to build coasters surrounded by scenery; in this case, I built a Vertical Drop coaster with Abstract theming. What I like about this combo is that the coaster type's options for steep lifts and vertical drops enable the coasters to cover less space than other coasters and still be tall and fast rides, and the Abstract cubes enable me to build structures a lot higher without needing as many scenery parts.
